Lilly’s famous lemon bars

My mom was famous for many things. Being fun, up for a treat any time, playing rummy, puzzles, rocking babies, crocheting baby blankets, loving her family and church, cooking, baking, yelling, bossing, forgiving, and the list goes on. Not a better mother was there on this earth.

If you were at a family function, graduation open house, or just lucky enough to be over when these lemon bars were served, you simply cannot forget them. They are one of my Uncle Al’s and cousin Luke’s favorite desserts!

When my mom was sick, I wanted to be able to remember her voice after she was gone, so the way I accomplished this was to record her giving me some recipes. This one is a favorite…I miss her terribly, she would love this blog.

Lilly’s famous lemon bars

Ingredients

  • 1/2 cup butter

  • 1 cup flour

  • 1/4 cup powdered sugar (“Plus a little more,” Lilly says in the video!)

  • 2 eggs

  • 1 cup sugar

  • 2 tbsp flour

  • 1/3 tsp salt

  • 3 tbsp fresh lemon juice

Directions

  • Mix butter, flour and powdered sugar together like pie crust – cutting the butter into the flour with a pastry cutter
  • Press into 9×9 pan
  • Bake at 350 degrees for 10-12 minutes
  • In a separate bowl, beat two eggs, then add your sugar, flour, salt, and fresh lemon juice. Mix well.
  • Pour on top of baked crust (while hot) and bake an additional 12-15 minutes at 350 degrees until set!
